Wild rice stuffing is rarely anyone’s favorite on the Thanksgiving table. For this version, we swapped in nutty, chewy black rice, took a tip from fried rice and crisped it up in the pan, and added lap cheong, a cured Chinese pork sausage with a maple-y sweetness. (If you can’t find lap cheong, a maple-cured pork stick works as a substitute.) With crunchy peanuts, tender-juicy celery, and floral Fresno chiles to boot, it’s a riot of textures and sweet-and-savory flavors that still plays nice with the rest of the spread. Now that’s a side we can get behind for the holidays, or really, anytime of the year—especially when it’s topped with a fried egg.
- 2 red Fresno chiles, finely chopped
- ¼ cup unseasoned rice vinegar
- 7 Tbsp. neutral oil (such as grapeseed, canola, or vegetable), divided
- 4 cups cooked black rice, chilled until cold (from 1½ cups raw)
- ½ tsp. kosher salt, plus more
- 6 oz. Chinese sausages (lap cheong; about 6), thinly sliced on a diagonal
- 3 celery stalks, sliced on a diagonal into ¼" pieces, plus leaves for garnish
- 6 oz. shiitake mushrooms, stems removed, sliced ⅛" thick
- ½ cup roasted salted peanuts, chopped
Whisk chiles, vinegar, miso, maple syrup, and 1 Tbsp. oil in a small bowl to combine; set aside until ready to use.
Heat 2 Tbsp. oil in a large (at least 10") nonstick skillet over medium until shimmering. Add chilled rice and press into a flat, even layer. Cook, undisturbed, until underside is very crisp (take a peek and give it a feel; it should be crackly), 7–8 minutes. Break it up into a few large pieces, turn, and continue to cook until crispy all over, 3–4 minutes longer. Season rice with salt, then toss to break up crispy bits. Transfer to a large bowl.
Cook sausages, sliced celery, and 1 Tbsp. oil in same skillet over medium heat, stirring occasionally, until sausage and celery begin to brown in some parts, and celery is crisp-tender but not floppy, 3–4 minutes. Transfer sausage mixture to bowl with rice.
Heat remaining 3 Tbsp. oil in same skillet over medium until very hot, about 1 minute. Add mushrooms and toss once or twice to coat in oil. Season mushrooms with ½ tsp. salt and cook, undisturbed, until browned underneath, 4–5 minutes. Toss and continue to cook, tossing occasionally, until softened and browned in more places, 3–4 minutes longer.
Return rice mixture to skillet and cook, tossing occasionally, until warmed through, about 1 minute. Remove skillet from heat, stir in rice vinegar dressing and peanuts, and toss again to coat. Taste and season with more salt if needed.
Transfer rice mixture to a platter. Garnish with celery leaves.

Risotto with Sausage and Cauliflower

Chinese Crispy Beef
I love “better than takeout” Chinese food. Ordering in definitely has its place in my life. It is a convenience and timesaver. However, most of the time, I would much rather avoid feeding my family excess salt and any MSG. So I created this Chinese Crispy Beef recipe. It tastes better than even my favorite takeout spot. Plus, it’s a natural and healthy dish: paleo, dairy-free, and gluten-free.
- Oil, For Frying
- 1 cup Tapioca Starch, Plus 1 Tablespoon, Divided
- 2 pounds Stir-fry Beef
- ¾ cups Coconut Aminos
- 2 Tablespoons Cooking Sherry
- ½ teaspoons Kosher Salt
- ½ teaspoons Black Pepper
- ½ teaspoons Ginger
- ¼ cups Water
- ⅓ cups Diced Scallions (green Parts Only)
In a 12-inch skillet, add 1/2 inch of oil. Preheat over medium high heat.
Toss beef in 1 cup tapioca starch until evenly coated. Fry beef in batches. Allow it to get brown and crisp, then flip to brown the other side. Remove fried pieces and allow to sit on paper towels while you finish frying. Add oil as needed.
When all of the beef is fried, drain all but 1 tablespoon of frying oil. Keep it over medium high heat.
In a separate small bowl, whisk coconut aminos, cooking sherry, remaining 1 tablespoon tapioca starch, kosher salt, black pepper, ginger and water. Pour this mixture into the hot skillet. Whisk immediately and continuously while sauce comes to a boil. Continue whisking for 2 additional minutes. Remove from heat.
To assemble the Chinese Crispy Beef, spread crispy meat in a 9吉 dish. Top with sauce and scallions. Toss until thoroughly coated. Serve!
What to serve with Chicken Fried Rice
I happily serve this as a meal because while one ordinarily assumes fried rice is carb heavy, in actual fact this recipe only calls for 2 cups of cooked rice compared to almost 4 cups of other “stuff” (chicken, veg, bacon).
It sounds out of whack, but you can see from the photos that it looks just as it should – like a fully loaded Chicken Fried Rice!
And it is of course suitable for serving as a side with anything Chinese or Asian for that matter, but I’d avoid things with very strong kapow flavours, like Thai Red Curry or Kung Pao Chicken because this Fried Rice has enough flavour in itself.
Milder stir fries on the other hand like Beef and Broccoli, Cashew Chicken, Prawn Stir Fry and Chop Suey Chicken Stir Fry would be fabulous.

MAKE A MEAL OUT OF STARTERS
Make a meal out of dishes ordinarily served as starters by adding a side of Fried Rice. Things such Hot and Sour Soup, Chinese Corn Soup, Spring Rolls, Chinese Lettuce Wraps (San Choy Bau) or Egg Foo Young.
What goes in the Asian Dressing
Here’s what you need for the Asian Dressing. The rice vinegar can be substituted with cider vinegar, and you can omit either the garlic or ginger and it will still be fabulous.
For a simple alternative Asian dressing, try this simple Asian Sesame Dressing.
How To Make Crispy Tofu?
Making Crispy Tofu is very easy. Few basic steps to prep the Tofu and you will be surprised with the outcome.
- Always choose extra firm Tofu among other varieties. As the name says it is firm and easy to work with.
- I always soak tofu in lightly salted warm water for 15 minutes. This helps in to soften and season the tofu. (I do this even with Paneer- Indian Cottage cheese).
- Last but most importantly drain extra moister. Keep Tofu on a clean kitchen towel/ tissue. Cover it with another layer of tissue. Place some heavy weight on it, heavy enough to put little pressure and squeeze out extra water.
Tofu is an excellent source of protein ( In 100gms 8 gms of Protein) and it is dairy free too. You can also substitute tofu with Panner(Indian Cottage cheese), chicken or Shrimps and make this dish.
Bobby Flay’s Crispy Coconut-Scallion Rice And the Trader Joe’s Entrées I’d serve with it.
Over the weekend, I was binge-watching “Beat Bobby Flay”. I’d recently bought Bobby Flay’s “Bobby At Home: Fearless Flavors from My Kitchen” (Clarkson Potter 2019). It is his latest in a library of 14 cookbooks he has written, an astonishing output from this extremely busy chef. Just the day before, I’d made his signature Crispy Coconut-Scallion Rice to much acclaim. In “Bobby At Home” he wrote “If there is one single dish that is responsible for me winning on Beat Bobby Flay, it is this one. Not served on its own, obviously, but alongside braises and Asian-inspired dishes.” So it should have come as no surprise that on my binge, crispy rice made Bobby into the winner not once, not twice, but three times. And in every case, it was the deciding factor in his win. No wonder. The aroma of coconut and the crunch and flavor of scallions alone lift this rice to another level. Add to it the crispy-ness and this is rice unlike I’d ever tasted before.
The Case for Trader Joe’s Chinese FoodCrispy Coconut-Scallion Rice topped with Trader Ming’s Honey Walnut Shrimp
I’ve been cooking a lot of rice recently as we’ve been eating lots of Asian food. We strive for home-made and non-processed food. But Confession Time: I love a lot of the frozen Chinese entrées from Trader Joe’s. I really don’t want to start a food fight over whether they’re good for you or bad. What I do know is that TJ’s uses no artificial flavors, no artificial preservatives, no MSG, no genetically modified ingredients, no partially hydrogenated oils (artificial trans-fats). Caveat emptor: Their sodium counts are high–if you are on any kind of reduced sodium diet, that is important to know. What I also know is that Trader Ming’s (the name you’ll see on the Chinese dishes) are an incredible value. In New York City, they run about $4.99 for what could easily be enough for three people.
Our Trader Joe (or Trader Ming) favorites…and one that’s not up to snuff.
Our favorites? Hands down, Kung Pao Chicken is on the list. There’s a reason their Mandarin Orange Chicken is the #1 item sold at Trader Joe’s. The Shitake Mushroom Chicken dish greatly improved with some red pepper flakes, that too makes the grade. And we just discovered the Honey Walnut Shrimp –although there’s a split decision: I loved it. Andrew thought it was too sweet. Finally, you can do no wrong serving their low-fat Chicken Chow Mein–except you can’t serve it with today’s rice recipe. It comes with its own noodles. There is one bomb. You can keep their Beef with Broccoli. The latter is not all that hard to make and theirs is just not up to homemade.
Changes we made to the recipe you might want to consider yourself
Bobby Flay’s Crispy Coconut-Scallion Rice isn’t at all hard to make. I diverged from the original recipe a little. Flay suggests you should make the rice the night before or even use leftover rice from Chinese take-out. Secondly, he uses Carolina long-grain rice. Ever since I got back from Asia two years ago, I’ve used nothing but Jasmine Rice from Thailand for Asian food, Basmati from India for Indian cooking. I am guessing that these may not be as easy to find as Carolina–especially if you live in a Trader Joe-free zone.
When using Jasmine rice, the instructions are clear.
The rice has to be rinsed several times. I start by putting whatever quantity I am making, in this case, 2 cups of rice, into a saucepan and then fill it with water. I swish the water around and it’s extraordinary how milky the water becomes. Then I pour both water and rice into a strainer and run it under the tap until the water under the strainer runs clear. The idea portion of liquid to rice is exactly two cups. Here one cup is unsweetened full-fat canned coconut milk and the other cup water. You bring it to a boil and the minute it boils, turn the stove off, let the rice stand for 18 minutes. Wait another five minutes, fluff the rice then spread it on a baking sheet and let it cool completely in the fridge. The cooling time is why Bobby Flay recommends cooking the rice the night before. I did not. But I did allow a good hour and half of refrigerator time. Follow the rest of the recipe instructions and you’ll end up with Bobby’s prize-winning rice. Just one thought: You can’t have too many thinly-sliced scallions. The suggested ½ cup all but disappears just when you are supposed to be sprinkling the finished rice with more scallions. Here is the recipe which is exactly how Bobby wrote and not how Monte changed it.
